Breakfast Burrito With Eggs, Sausages, Bell Peppers, Onions, Cheese, and Salsa

This is my take on a breakfast burrito with scrambled eggs, breakfast sausages, chopped and stir-fried bell peppers and onions, melted Mexican 4-cheese blend, and medium-hot salsa.

I cracked 5 eggs and poured them into a bowl.

I beat the eggs with a whisk until the egg white was evenly mixed with the yolk. If the eggs are not evenly mixed, the scrambled eggs will be spotted with egg whites.

I added milk to the egg mix and cooked the scrambled eggs by stirring the cooked parts towards the center repeatedly on medium-low heat.

I added parsley flakes as I was cooking the scrambled eggs. You can add any variety of your choice seasoning at this point.

I cooked 4 breakfast sausage patties on medium-low heat. You can use any choice meats, such as small pieces or strips of chicken for example.

I cut the sausage patties into small pieces using a spatula and a wooden spoon.

I stir-fried onions and green, yellow, and red bell peppers in a small pan on medium-low heat.

I put a small amount of olive oil in a small pan, on low heat, and covered a Mexican soft flower tortilla with the olive oil on both sides. I put the Mexican 4-cheese blend on one side and scrambled eggs, breakfast sausage pieces, and stir-fried bell peppers and onions on the other half.

I let the shredded cheese melt just a little bit.

I prefer to have the salsa on the side so that I can add to the breakfast burrito as I eat it. This way I won't add too much salsa to overwhelm the flavors of the breakfast burrito.

I kept the extra portions in case I want to cook another tortilla or save them for the next day.

This is a very delicious breakfast. In hindsight, I would have put less ingredient portions into each burrito to make it easier to fold the burrito.

Mashed Potatoes with Gravy

This is my second time cooking a meal with mashed potatoes and gravy. It's a delicious and quick meal to prepare. I had mashed potatoes with brown gravy, spinach, and baked chicken thighs.

First, I cleaned the potatoes with something abrasive.

I prefer to peel the potatoes, so I peeled the potatoes and placed them in a bowl of cold water to remove some of the starch.

I chopped the potatoes into small pieces and placed them into another bowl of cold water to continue removing the starch.

I put the potato pieces into 2 pots filled with cold water and added a pinch of salt into each pot.

I brought the water, with the potato pieces, to boil until the potatoes were soft enough to easily cut in half.

I drained the water from the potatoes.

I mashed the potatoes until the mix was smooth.

I melted some butter and mixed it with the mashed potatoes.

I added warm milk and mixed it into the mashed potatoes.

I mixed the mashed potatoes until there are no lumps, while adding salt in the process. I didn't add any extra seasoning, since I was going to add brown gravy, but feel free to add any seasoning you want at this point.

I brought a cup of water, along with gravy mix, to boil and stirred it occasionally to keep lumps from forming. Then, let the gravy simmer and continue to stir it.

I boiled some spinach with a little bit of water, olive oil, some garlic powder, and a pinch of salt.

I baked some chicken thighs with Italian dressing and hot sauce.

I put everything together onto a plate and poured some gravy over the mashed potatoes.
